Christmas Snow Caps - cooking recipe

Ingredients
    3 egg whites
    1/8 tsp. cream of tartar
    1/2 tsp. peppermint extract
    dash of salt
    3/4 c. fine granulated sugar
    2/3 c. diced, candied cherries
Preparation
    Beat
    egg
    whites
    to
    which
    cream
    of tartar has been added, until
    stiff, but not dry.
    Add peppermint extract and salt.
    Add sugar
    gradually
    and
    beat until well blended and smooth.
    Save some
    of
    the
    candied cherries for topping the cookies, but
    add the
    rest, a few at a time, to egg mixture. Cover
    cookie
    sheet with
    plain
    brown
    paper.
    Drop
    cookie mixture by teaspoonfuls onto the paper.
    Bake at 325\u00b0 about 20 minutes.
    Let
    stand
    a few minutes after removing from oven, then
    remove
    warm cookies with a spatula and place on a rack. Top with remaining cherries. Yield:
    about 30 cookies.
