Dottie'S "Whenever" Biscuits - cooking recipe

Ingredients
    2 c. unbleached flour
    4 c. whole wheat pastry flour
    6 level tsp. baking powder
    3/4 tsp. baking soda
    3 tsp. salt
    3/4 c. shortening
    3 c. buttermilk
Preparation
    Sift dry ingredients into bowl.
    With fork or pastry blender, incorporate shortening into flour until like cornmeal.
    Gradually add milk, blending with fork until spongy, mixing in all the flour.
    Turn out onto floured board, kneading until smooth.
    Round up on board; cover with bowl and let rest 10 minutes.
    Uncover and work down.
    Pat out to desired thickness and cut.
