Ingredients

2 sticks butter, softened
2 c. sugar
3 eggs
3 c. unbleached flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
2 Tbsp. lemon zest
2 Tbsp. fresh lemon juice
Preparation

Preheat oven to 325\u00b0.
Grease a 10-inch tube or Bundt pan. Cream butter and sugar until light and fluffy.
Beat in eggs, one at a time.
Continue to beat until light.
Sift together flour, baking soda and salt.
Stir dry ingredients into egg mixture alternately with buttermilk, beginning and ending with dry ingredients.
Add lemon zest and juice.
Pour batter into prepared pan.
Bake for 1 hour and 5 minutes.
Cool cake for 10 minutes. Remove cake from pan and spread icing at once, while cake is hot.
