Baked Chicken And Pepper - cooking recipe

Ingredients
    6 or 8 boneless chicken breast halves
    3 c. bell pepper, cut into strips
    1/2 c. thin sliced red onion
    1 Tbsp. vegetable oil
    1 c. salsa sauce (medium or hot)
    1/2 tsp. chili powder
    1/2 tsp. ground cumin
    1 c. (4 oz.) shredded Cheddar or Monterey Jack cheese
    chopped cilantro for decoration (optional)
Preparation
    Place single layer of chicken in greased 9 x 13-inch baking dish.
    Sprinkle with salt.
    In 10-inch skillet, saute pepper and onion in oil until tender.
    Stir in salsa, chili powder and cumin. Spoon over chicken.
    Cover tightly with foil.
    Bake at 350\u00b0 for 30 minutes.
    Remove foil.
    Top with cheese.
    Bake, uncovered, until cheese melts.
    Top with cilantro.
    Serve with salsa.
