Leek And Mushroom Soup - cooking recipe

Ingredients
    4 Tbsp. unsalted butter
    4-5 lg. leeks, washed and thinly sliced
    1/2 lb. mushrooms, thinly sliced
    4 c. chicken stock
    4 medium potatoes, peeled and diced
    1 c. light cream
    Salt and pepper
    Optional: Chopped chives
    Chopped parsley
Preparation
    In large frying pan, melt butter and saute leeks and mushrooms until almost soft, about 5 minutes.
    Add stock, and salt and pepper to taste.
    Bring to a boil and add the potatoes. Simmer, with lid ajar, about 30 minutes.
    Cool and puree in a blender.
    Add cream.
    Serve hot or cold.
    Garnish with chopped chives, a few mushroom slices, or chopped parsley.
