Spiced Apples - cooking recipe

Ingredients
    10 large, firm, tart apples
    lemon juice
    4 c. sugar
    4 tsp. whole cloves
    6 (2-inch) sticks cinnamon
    2 c. white vinegar
    red food coloring
Preparation
    Pare apples, quarter and core; cut each quarter into 3 thick slices.
    Place in a large bowl of water and lemon juice.
    Combine sugar, cloves, cinnamon sticks and vinegar in kettle; tint bright pink with food coloring.
    Heat to boiling.
    Simmer 10 minutes. Drain apples; add enough syrup at a time to make one layer deep. Heat to boiling.
    Cook 2 minutes or just until apples are tender. Pack into hot jars.
    Process 15 minutes in water bath.
