Zucchini Casserole - cooking recipe

Ingredients
    6 c. diced yellow/green zucchini squash
    1/4 c. chopped onion
    1 can cream of chicken soup
    1 c. sour cream
    1 c. grated carrots
    1/2 c. oleo
    6 oz. Pepperidge Farm stuffing mix (3 c.)
Preparation
    Boil zucchini and onions for 5 minutes; drain.
    Mix cream of mushroom soup, sour cream and carrots.
    Melt oleo and stir in stuffing mix.
    In a 9 x 13-inch pan, put 1/2 of stuffing mix; spread.
    Pour zucchini mixture on and top with remaining stuffing mix.
    Bake 30 minutes at 350\u00b0 until bubbly.
    This may be frozen baked or unbaked.
