Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. finely chopped walnuts
powdered sugar
Preparation

Beat eggs for 3 minutes; add sugar and beat for 2 minutes.
Add pumpkin and lemon juice, mixing well.
Mix together flour, spices, baking powder and salt.
Fold into egg mixture and pour in well-greased 15 x 10 x 1-inch baking dish.
Sprinkle nuts over batter.
Bake at 375\u00b0 for 15 minutes.
Turn onto towel right away and cool slightly (5 to 10 minutes).
Sprinkle with powdered sugar, then roll towel and cake together and cool for 20 to 30 minutes. Unroll and spread filling over cake and reroll without the towel. Set on serving plate and wrap with aluminum foil and chill 30 minutes.
