Rice Pudding - cooking recipe

Ingredients
    1/2 lemon
    4 c. milk
    1/2 c. sugar
    1/4 tsp. salt
    1/2 c. long grain rice
    3 egg yolks, beaten
    ground cinnamon
Preparation
    Remove yellow part of lemon peel with a vegetable peeler.
    Cut peel into strips.
    In a saucepan, combine peel, milk, sugar and salt.
    Bring to a boil.
    Gradually stir in rice.
    Cover and cook, stirring occasionally, over low heat for 35 to 45 minutes or until rice is tender.
    Remove lemon peel.
    Gradually add half of rice mixture to egg yolks.
    Return all to saucepan.
    Cook and stir 2 minutes.
    Pour pudding into a shallow oval dish.
    Cool.
    Score top of pudding in a diamond pattern.
    Sprinkle cinnamon along the cuts. Chill.
    Serves 8.
