Sauteed Eggplant - cooking recipe
Ingredients

1 1/2 lb. eggplant
1/4 c. extra virgin olive oil
2 Tbsp. chopped parsley
2 garlic cloves, chopped
salt
Preparation

Cut the tops off the eggplant and cut them first into thick slices, then into cubes.
Fry the garlic gently in the oil in a large skillet.
Add the eggplant and cook over moderate heat just until tender.
