Potato Candy - cooking recipe

Ingredients
    1/2 c. mashed potatoes, cold (1 medium potato)
    1/8 tsp. salt
    1/2 tsp. vanilla
    peanut butter
    4 to 7 c. powdered sugar
Preparation
    Mix together mashed potatoes, salt and vanilla.
    Add enough sugar to make it firm enough to hold it's shape.
    On wax paper sprinkled with sugar, roll out mixture into a rectangle, 16 x 9 inches and 1/8 inch thick.
    Spread with peanut butter.
    Roll up dough lengthwise in wax paper.
    Chill 30 minutes or longer.
    When ready, slice in 1/2-inch pieces.
