Ingredients

1 c. cooked and mashed potatoes
3 egg yolks (keep whites)
1 c. milk
1 1/2 c. cake flour
1 Tbsp. sugar
1 Tbsp. baking powder
1/4 tsp. salt
1/4 tsp. nutmeg
3 Tbsp. melted butter
Preparation

Blend the potatoes, egg yolks and milk until smooth.
Add the cake flour, sugar, baking powder, salt and nutmeg.
Whip 3 egg whites until peak.
Stir 1/4 of whites in first, then stir in the rest of the whites.
Add the melted butter.
Pour into iron.
