Rice Casserole With Sour Cream Cheese And Chilies - cooking recipe

Ingredients
    6 c. cooked rice (white or brown)
    3 c. sour cream
    salt and pepper
    1 (4 oz.) can diced green chilies
    1 lb. Monterey Jack cheese, grated
    8 scallions, chopped with part of the green
    1 1/2 c. grated Cheddar cheese
Preparation
    Place one-third of the cooked rice in a well-greased, ovenproof serving dish of 4-quart capacity.
    Spread 1 cup of the sour cream over the rice and sprinkle generously with salt and pepper.
    Sprinkle with half the chilies, the Monterey Jack cheese and chopped scallions.
    Repeat the layers in the same order. Finish with the last third of the rice and the sour cream. Sprinkle with salt and pepper and top with grated Cheddar cheese. Bake at 350\u00b0 for about 20 minutes, or until the cheese is melted and the rice is heated all the way through.
