Eggplant Parmesan - cooking recipe
Ingredients

1 large eggplant, peeled
3 egg whites
2 c. whole wheat pastry flour
1/4 to 1/2 c. nonfat milk
1 c. spaghetti sauce
1/4 lb. Mozzarella cheese
Preparation

Make batter with flour, egg whites and nonfat milk.
Dip pieces into batter.
Either saute in pan or bake on greased cookie sheet at 350\u00b0 for 45 minutes or until tender.
Put onto platter. Spread with spaghetti sauce and shredded Mozzarella cheese.
Put back in oven to melt cheese.
Serve with brown rice and steamed broccoli.
