Layered Chicken Salad(Serves 8 To 10) - cooking recipe

Ingredients
    4 to 5 c. iceberg lettuce, shredded
    1 medium cucumber, thinly sliced
    1 c. jicama, cubed
    1/2 c. green onions, thinly sliced
    1 lb. fresh pea pods, cut in half
    4 c. cooked chicken, cubed
    2 c. light mayonnaise
    1 Tbsp. sugar
    2 tsp. curry powder
    1/2 c. ground ginger
    Cherry tomatoes and fresh parsley sprigs (optional)
Preparation
    Place lettuce in the bottom of a 4-quart salad bowl. Layer with cucumber, jicama, onions, pea pods and chicken. In a small bowl combine mayonnaise, sugar, curry and ginger. Spread over the top of salad.
