Cream Of Coconut Cake - cooking recipe

2 1/2 c. sifted self-rising flour
1 1/2 c. sugar
3/4 c. vegetable shortening
1 c. milk
1 1/2 tsp. vanilla
5 egg whites
2 1/2 c. fresh frozen coconut, divided (9 oz.)
1 (8 1/2 oz.) can cream of coconut
1 (12 oz.) container frozen whipped topping, thawed
Preparation

Preheat oven to 350\u00b0.
Grease and flour a 13 x 9 x 2-inch baking pan.
In large bowl, combine flour, sugar, shortening, milk, vanilla, egg whites and 1 cup coconut.
Blend 2 minutes at low speed, scraping sides of bowl.
Beat at medium speed 2 minutes.
Pour batter into pan.
Bake 30 to 35 minutes or until toothpick in center comes out clean.
Cool 10 minutes.
