Do Ahead Mashed Potatoes - cooking recipe
Ingredients

8 or 9 large potatoes, peeled
2 (3 oz.) pkg. cream cheese, at room temperature
1 c. dairy sour cream or plain yogurt
2 tsp. onion salt or 1 Tbsp. minced chives
1/4 tsp. pepper
2 Tbsp. butter or margarine
grated cheese or paprika
Preparation

To roast a pepper, broil or grill it until it's black all over. Put the roasted pepper in a brown paper bag or wrap in newspaper. Seal tightly.
After 10 minutes or so, use a knife to peel off the skin and scrape away the seeds.
Cut the pepper into strips. To store (up to a month), cover with oil in a jar and refrigerate.
