Myrt'S Baked Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1/2 medium green pepper (about)
    1 small onion or to taste
    saltine crackers (about 30), crushed
    1 egg, beaten
    2 Tbsp. butter
    1/4 c. milk
Preparation
    Peel
    and dice eggplant and cook until tender in enough salted water
    to\tcover (about 15 minutes).
    Drain off water. Stir
    in diced green pepper and diced onion.
    Add most of the cracker crumbs
    and
    1
    beaten egg.
    Place in buttered baking dish.
    Dot with
    butter
    and sprinkle on remainder of cracker crumbs. Moisten top with milk.
    Bake at 350\u00b0 about 45 minutes or until firm.
    Very good.
