Two-Potato Bake - cooking recipe

Ingredients
    4 c. peeled, or not, thinly sliced sweet potatoes
    4 c. peeled, or not, thinly sliced red potatoes
    2 Tbsp. minced fresh onion
    2 Tbsp. margarine
    1/2 tsp. salt
    1/2 tsp. pepper
    3/4 c. skim milk
    2 Tbsp. minced fresh parsley
    2 Tbsp. grated Parmesan cheese
Preparation
    Coat an 11 x 7 x 2-inch baking dish with cooking spray.
    Layer 2 cups sweet potatoes in half of dish; layer 2 cups red potatoes in other half.
    Sprinkle with onion.
    Drizzle with half of margarine.
    Sprinkle with half of salt and pepper.
    Repeat with remaining ingredients.
    Bring milk to a boil; pour over.
    Cover with foil.
    Cut 8 slits in foil.
    Bake at 425\u00b0 for 30 minutes. Uncover and bake 10 minutes.
    Remove from oven.
    Sprinkle with parsley and cheese.
    Let stand 5 minutes before serving.
