Orange Bran Muffins - cooking recipe

Ingredients
    2 c. shreds of whole bran cereal
    2 c. low-fat buttermilk
    1/2 c. oil
    1 Tbsp. grated orange peel
    4 egg whites or 2 eggs
    2 1/2 c. flour
    1 1/2 c. sugar
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
Preparation
    In a large bowl, combine cereal and buttermilk; let stand 5 minutes until cereal is softened.
    Add oil, orange peel and egg whites; blend well.
    Lightly spoon flour into measuring cup; level off.
    Stir in flour, sugar, baking powder, baking soda and salt; mix well.
    Batter can be baked immediately or stored in a tightly covered container in the refrigerator up to 2 weeks.
