Apricot Cottage Cheese Pie - cooking recipe
Ingredients

1 pie shell (unbaked)
1 1/2 c. apricots, peaches or apples, sliced thin
2 eggs
1 c. cottage cheese
3/4 c. sugar
1/2 c. all-purpose cream
1/4 tsp. salt
1 tsp. grated lemon rind
1/2 tsp. cinnamon
1/4 tsp. nutmeg (if you use apples)
Preparation

Line pie pan with pastry; beat eggs slightly and add cottage cheese, 1/2 cup sugar, cream, salt and lemon rind.
Mix the remaining sugar with cinnamon and sprinkle over apricots.
Cover with egg and cheese mixture.
Bake 10 minutes at 425\u00b0.
Reduce heat to 350\u00b0 and bake 30 minutes longer.
