Broccoli-Stuffed Tomatoes * - cooking recipe

Ingredients
    4 large ripe tomatoes, halved and seeded
    1 tsp. salt-free vegetable seasoning
    10 oz. pkg. frozen chopped broccoli, defrosted and drained
    1/2 red onion, minced
    1/2 c. whole wheat bread crumbs
    3 Tbsp. chopped parsley
    1 tsp. dried basil, crushed or 1 Tbsp. chopped fresh basil
    2 Tbsp. nonfat yogurt or light mayonnaise
    2 Tbsp. grated Parmesan cheese
Preparation
    Season tomatoes with vegetable seasoning.
    Place broccoli, onion, bread crumbs, parsley, basil and yogurt in bowl.
    Mix lightly with fork.
    Stuff tomato halves with broccoli mixture and sprinkle with Parmesan.
    Place in shallow ovenproof baking dish and bake at 350\u00b0 for 20 to 25 minutes or microwave, covered, on High 2 minutes.
