Ingredients

1 orange
6 medium apples, peeled, cored and coarsely chopped (6 c.)
3 Tbsp. lemon juice
5 c. sugar
Preparation

Quarter unpeeled orange; remove seeds and thinly slice.
In an 8 to 10-quart kettle or Dutch oven, combine the first 3 ingredients and 2 cups water.
Bring to boiling.
Reduce heat; simmer until apples are tender.
Add sugar.
Bring to full rolling boil, stirring constantly.
Cook and stir until thickened and clear.
Remove from heat.
Skim off foam.
Pour at once into hot, sterilized jars, leaving 1/4-inch headspace.
Adjust lids. Process in boiling water bath (half pints) for 15 minutes.
Makes 6 half pints.
