Raisin Applesauce Cake(Diabetic) - cooking recipe

Ingredients
    2 c. raisins
    2 c. water
    1 1/2 c. unsweetened applesauce
    3 eggs
    1 c. cooking oil
    1/4 c. plus 1 Tbsp. Sweet 'N Low
    1 1/2 c. frozen fruit (of your choice)
    3 c. self-rising flour
    2 Tbsp. cinnamon
    2 Tbsp. vanilla
    1/4 tsp. soda
    1 c. nuts, chopped
Preparation
    Cook raisins in water on high until all water is gone.
    Do not scorch.
    In large mixing bowl mix applesauce, eggs, oil and sweetener.
    Mix well.
    Sift flour, soda and cinnamon together. Add raisins.
    Then add vanilla and flour, cinnamon and soda mixture.
    Blend together.
    Add fruit and nuts.
    Stir well with spoon.
    Pour into a well-greased and floured Bundt pan or tube. Cook at 350\u00b0 for 40 to 45 minutes or until done.
    Test with toothpick for doneness.
    It will be moist.
