Hopping John - cooking recipe

Ingredients
    2 c. black-eyed peas
    1 medium ham hock
    1 medium onion, chopped
    2 stalks celery, chopped
    1 small bay leaf
    2 to 3 c. water
    1/2 tsp. salt and pepper
    1 1/2 c. uncooked rice
Preparation
    Simmer peas, ham hock, onion, celery and bay leaf covered until peas are tender.
    Cook rice.
    Combine peas, rice, ham and liquid from peas.
    Simmer.
