Curried Rice Salad - cooking recipe

Ingredients
    1 c. rice
    2 c. water
    1/2 c. green onion, minced
    1 Tbsp. vinegar
    2 Tbsp. salad oil
    1/2 tsp. curry powder
    2 tsp. salt
    1 c. chopped celery
    1 c. cooked frozen peas (this can be increased)
    1/2 c. mayonnaise
    1/2 c. salted peanuts
    1/2 c. raisins
    1/2 c. jicama
Preparation
    Cook rice according to package instructions.
    Cool and fluff rice with a fork.
    Mix onion, vinegar, salad oil, curry powder and salt.
    Add to cooled rice and refrigerate at least 3 hours. Combine remaining ingredients with rice before serving.
