Sweet And Sour Chicken - cooking recipe

Ingredients
    1 lb. cubed, boneless chicken breasts
    2 Tbsp. oil
    1/2 c. green pepper strips
    1/2 c. red pepper strips
    1 c. carrot strips
    1/4 tsp. garlic powder
    1 Tbsp. cornstarch
    1/4 c. soy sauce
    1 (8 oz.) can pineapple chunks (in juice)
    3 Tbsp. vinegar
    3 Tbsp. brown sugar
    1/2 tsp. ground ginger
    1 1/2 c. rice
    cashews and mushrooms (optional)
Preparation
    Brown chicken in skillet in hot oil.
    Add peppers, carrots and garlic powder.
    Cook and stir 1 to 2 minutes.
    Mix cornstarch with soy sauce. Add to pan with pineapple, cashews, mushrooms, juice, vinegar, sugar and ginger. Bring to a full boil.
    Meanwhile, prepare rice and serve chicken over rice.
