Soy Grits Croquettes - cooking recipe

Ingredients
    1 Tbsp. peanut oil
    2 c. cooked grits
    1 c. cooked brown rice
    5 Tbsp. minced onion
    1/2 tsp. vegi salt
    1 Tbsp. powdered vegetable broth
    other seasonings to taste
    1/2 c. cornmeal or cracker crumbs
    1 egg
Preparation
    Brown onion in oil.
    Add cooked grits, rice and seasoning. Mold into croquettes, dip in beaten egg, then include meal or crumbs.
    Place in shallow greased pan, then place in hot oven about 30 minutes or until brown.
    Serve with gravy or tomato sauce.
    Serves 6.
