Ingredients

6 c. peeled, grated zucchini
6 c. sugar
1/2 c. lemon juice
1 c. drained, crushed pineapple
2 (3 oz.) pkg. Jell-O
Preparation

Gently boil zucchini for 15 minutes.
Add sugar and boil 6 minutes, stirring often.
Add lemon juice and pineapple.
Boil 6 minutes.
Reduce heat and add Jell-O.
Stir.
Pour in jars and seal.
Refrigerate.
