Wood'S Applejack-Apple Pie(In Honor Of Jenny Kate) - cooking recipe

Ingredients
    pastry for 2-crust, 9-inch pie (deep-dish)
    3/4 c. sugar
    2/3 c. grated sharp Cheddar cheese
    2 Tbsp. flour
    2 tsp. grated orange rind
    1/4 tsp. cinnamon
    1/8 tsp. salt
    5 c. peeled, cored and thinly sliced apples
    9 Tbsp. granulated sugar, divided
    lime juice (fresh)
    12 tsp. applejack, divided
    3 Tbsp. whipping cream
Preparation
    Make your favorite pastry for a 2-crust, 9-inch pie.
    Roll out 1/2 the pastry to fit the pie plate; flute edges.
