Chili, Vegetarian-Style - cooking recipe

Ingredients
    2 Tbsp. oil
    1 clove garlic, chopped
    1 large onion, chopped
    1/8 tsp. cayenne
    1 1/2 Tbsp. chili powder
    1 scant tsp. cumin
    1 tsp. oregano
    1 medium green pepper, chopped
    2 c. canned tomatoes, drained
    4 c. cooked kidney beans, drained
Preparation
    Heat oil in medium Dutch oven and saute garlic for 1 minute until it begins to color.
    Add onion and cook for 3 minutes until softened.
    Add seasonings and green pepper and cook for 1 minute longer.
    Add remaining ingredients.
    Bring to a boil, cover and simmer over low heat for 20 to 30 minutes until thickened.
