Old-Fashioned Rice Pudding - cooking recipe

Ingredients
    2 eggs, well beaten
    1 1/3 c. milk
    1/4 c. sugar
    1 Tbsp. butter or margarine, softened
    1 tsp. vanilla extract
    1/8 tsp. salt
    2 c. cooked rice
    1/3 c. raisins
    1/2 tsp. grated lemon rind
    1 tsp. lemon juice
    3 Tbsp. soft bread crumbs
    1 Tbsp. butter or margarine, melted
Preparation
    Combine first 6 ingredients, mixing well.
    Stir in rice, raisins, lemon rind and juice.
    Spoon into a lightly greased 1-quart baking dish.
    Combine bread crumb and butter; sprinkle bread crumbs over top.
    Bake at 325\u00b0 for 40 to 45 minutes or until set.
    Yields 4 to 6 servings.
