Mom'S Banana Oatmeal Bread - cooking recipe

Ingredients
    1/2 c. plus 1 Tbsp. margarine
    2 c. sifted flour
    1/2 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. soda
    1/2 tsp. nutmeg
    1/2 c. quick cooking oatmeal
    2 eggs
    2 Tbsp. buttermilk
    1 tsp. lemon juice
    1 c. sugar
    1 1/2 c. sliced, ripe banana (3 medium)
    1/2 c. chopped nuts
Preparation
    Heat oven to 350\u00b0.
    Grease a 9 x 5 x 3-inch loaf pan with 1 tablespoon margarine.
    In a large bowl, sift together dry ingredients.
    Stir in oatmeal and set aside.
    In a blender, combine eggs, margarine, buttermilk, lemon juice and sugar; process until smooth.
    Add banana and nuts; process briefly.
    Pour mixture into dry ingredients and mix until flour is moistened.
    Pour into greased pan and bake 45 to 50 minutes or until a toothpick comes out clean.
    Cool on rack after removing from pan.
    Yields 1 loaf.
