Shirley'S Vegetable Tortillas - cooking recipe

Ingredients
    2 to 3 soft shell tortillas
    Soya Mozzarella cheese, cut in strips
    butter
    lettuce, cut up
    salt
    1/2 cucumber, sliced
    1/2 onion, sliced
    1 large or 2 medium carrots, grated
    1 medium turnip, grated
Preparation
    Put small amount of water in frying pan; add a little salt. Bring to a boil and add vegetables.
    Cover and cook until just tender; remove lid and cook a brief time to cook out any remaining water.
    In flat pan, beat butter and place tortilla shell on it. On one side of tortilla place several cheese strips.
    Place sauteed vegetables on top of cheese.
    Spread lettuce on top of other vegetables.
    Fold over the other side of tortilla and heat both sides.
    This makes 2 to 3 tortillas.
