Ingredients

1 1/2 c. nonfat milk
1/2 c. honey (if a sweeter pudding is desired, you may increase honey to 2/3 c.)
3 egg whites
2 tsp. vanilla
1/2 tsp. cinnamon
2 c. cooked brown rice (short grain preferred)
1/4 c. raisins
1/4 c. chopped dates
nutmeg
Preparation

Preheat oven to 325\u00b0.
In medium mixing bowl, combine milk, honey, egg whites, vanilla and cinnamon.
Beat with rotary beater or hand mixer until smooth.
Stir in rice, raisins and dates. Spoon mixture into custard cups.
Sprinkle lightly with nutmeg.
