Curried Rice Pilaf - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 large onion, sliced thin
    1 1/2 tsp. curry powder
    1 1/2 c. long grain rice
    1/4 c. currants
    1 cinnamon stick
    3 c. chicken broth
    1 medium size red sweet pepper, cored
    1 small carrot, pared and shredded
    1/2 c. frozen peas
    1/4 c. sliced almonds, toasted
Preparation
    Heat oil in a large skillet over medium heat.
    Add onion; saute until browned about 7 minutes.
    Stir in curry powder and rice.
    Add currants, cinnamon stick and broth.
    Bring to boiling, lower heat, cover and simmer 10 minutes.
