Stu'S Venison Chili - cooking recipe

Ingredients
    1/4 lb. bacon, fried up crisp (reserve bacon fat)
    1 medium-size onion, chopped
    6 medium-size carrots, peeled and halved lengthwise
    1 tsp. chili powder
    1/2 green pepper, chopped
    1/2 tsp. oregano
    2 lb. venison, cut into 1/2-inch cubes
    1 can red kidney beans, drained
    1 small can tomato paste
    1/2 can water
    1 can tomatoes
Preparation
    Brown venison in reserved bacon fat, then add onion, carrots, green pepper, chili powder and oregano and cook for 10 minutes. Add tomatoes, tomato paste and bacon and let simmer 45 minutes. Add kidney beans and simmer 30 minutes longer.
    May be served with rice, if desired.
