Pepper Relish - cooking recipe
Ingredients

2 large red peppers, coarsely chopped
2 large green peppers, coarsely chopped
2 large yellow peppers, coarsely chopped
1 onion, coarsely chopped
1 c. cider vinegar
1 c. white vinegar
1 1/2 tsp. salt
1 c. sugar
1 tsp. hot pepper flakes
1 Tbsp. mixed whole pickling spices
Preparation

Wash 3 (1 pint) jars with soapy water and rinse well.
Put the jars in a large saucepan; cover with water and bring to a boil. Boil for 20 minutes.
Turn off the heat and leave the jars in the water while you make the relish.
Wash, rinse and sterilize the lids in the same way, using a separate pan.
Drain the jars and lids just before using, so they are dry but still hot.
Put the peppers and onion in a bowl.
Cover with boiling water.
Let stand for 5 minutes and drain in a colander.
