Yellow Rose Of Texas - cooking recipe

Ingredients
    6 to 8 chicken breasts (best if boneless)
    6 Tbsp. butter
    1 small garlic clove, minced
    1/3 c. chopped celery
    2/3 c. chopped green onion
    1 (12 oz.) can Ro-Tel tomatoes with green chilies
    1 lb. Velveeta cheese, grated or 2 cans cheese soup
    rice
Preparation
    Saute chicken quickly in garlic and butter.
    Remove to casserole dish.
    Saute celery and onion in drippings.
    Add Ro-Tel tomatoes and heat to a simmer.
    Add cheese and heat thoroughly. Pour sauce over chicken breasts.
    Bake for 20 minutes in 350\u00b0 oven.
    Serve over rice.
