Creamed Lobster - cooking recipe
Ingredients

1 c. cooked lobster, cut small
3 Tbsp. butter
2 Tbsp. flour
1 c. top milk or milk and cream
salt, nutmeg, cayenne and lemon juice
Preparation

Cook lobster in butter 3 minutes over moderate heat.
Sprinkle with flour and stir well.
Add milk.
Cook slowly and stir until well heated and thickened.
Season to taste with salt, nutmeg, cayenne and lemon juice.
Serve on toast, in patty shells or with fluffy boiled rice.
If you like, add chopped parsley, strips of canned pimiento or sliced sauteed mushrooms.
Serves 3 or 4.
