Cukes In Vinaigrette Dressing - cooking recipe

Ingredients
    1 long cucumber or 2 short ones
    1 Tbsp. salt
    1/2 c. sugar
    1/3 c. vinegar
    1/3 c. coarsely chopped onion (optional)
Preparation
    Peel and slice cucumber (thick or thin slices depending on your taste). Cover with water and stir in salt. Refrigerate for at least 30 minutes. Then drain and thoroughly rinse. Add sugar, vinegar and onions (if desired). Mix well. Add water, a little at a time, until dressing is at desired strength. (The less water you add, the stronger the vinaigrette.)
