Vegetable Stew Or Sort-Of Ratatouille - cooking recipe

Ingredients
    beans
    corn (off cob)
    onions
    tomatoes
    squash (green/yellow)
    eggplant (unpeeled)
    cauliflower
    any other veggies you have on hand and you think will taste good
    salt
    pepper
    garlic
    oregano
    1 can tomato sauce or paste (small)
Preparation
    Chunk all veggies.
    Cook in large frypan until al dente.
    Add some water so they don't stick or fat if you prefer.
    Add seasonings generously (to taste).
    Add 1 can of tomato paste or sauce plus a can of water.
    Simmer until all flavors are blended. (Better the second day.)
    May serve with cheese on top or add ground meat (just cooked) or use over pasta as the sauce or use your imagination!
