Chicken-Rice Skillet Casserole - cooking recipe

Ingredients
    6 chicken breasts
    1/4 c. margarine plus 2 Tbsp. oil
    1 1/2 c. long grain rice
    4 c. chicken broth
    1 c. cooking wine (optional)
    fresh broccoli florets
    3 or 4 carrots, sliced thin
    flour
    paprika
    salt and pepper
Preparation
    Sprinkle chicken with paprika, salt and pepper and lightly flour.
    Brown slightly in oleo and oil.
    Add rice and brown 5 minutes more.
    Add broth and carrots.
    Cover with tight fitting lid.
    Simmer gently for 20 minutes or until liquid is mostly absorbed.
    Add broccoli, cover and simmer 10 minutes.
