Loganberry Tapioca - cooking recipe

Ingredients
    6 Tbsp. quick tapioca
    1/2 c. sugar
    1/4 tsp. salt
    1 (12 oz.) tin loganberry juice
    3/4 c. water
    1 1/2 Tbsp. lemon juice
Preparation
    Mix tapioca, sugar, salt, loganberry
    juice and water.
    Stir well and cook over direct heat, stirring constantly, until it reaches a full, rolling boil.
    Remove from heat and stir in lemon juice.
    Cool and chill before serving.
    It becomes much thicker when cold.
    Serve with top milk or cream.
    Makes 5 servings.
