Fish Casserole - cooking recipe

Ingredients
    1 lb. filet of sole, diced
    2 medium potatoes, grated
    1/3 c. butter, melted
    1/3 c. flour
    2 c. milk
    2 tsp. salt
    1/8 tsp. pepper
    2 small onions, grated
    2 diced pimentos
    1/2 lb. grated Swiss cheese
Preparation
    Mix butter, flour, salt, pepper and milk.
    Cook until smooth and thick.
    Stir in cheese, reserving 1/4 cup for topping.
    Stir in onion and pimentos.
    Alternate layers of potatoes, fish and sauce in buttered casserole.
    Sprinkle remaining 1/4 cup cheese on top.
    Bake, uncovered, in 350\u00b0 oven for 45 minutes or until top is brown.
    Serves 6.
