Eggplant Parmigiana - cooking recipe

Ingredients
    1 onion, chopped
    2 cloves garlic, minced
    2 lb. tomatoes, chopped
    3 oz. tomato paste
    1/2 Tbsp. sugar
    1/2 tsp. oregano
    1 to 2 eggs
    1 medium eggplant
    bread crumbs
    16 oz. Mozzarella cheese
Preparation
    Simmer first 5 ingredients for 45 minutes.
    Add oregano. Simmer 15 minutes more.
    Slice eggplant in 1/4 to 1/2-inch slices; dip in egg and roll in crumbs.
    Place in single layer on nonstick sheet 13 x 9-inch pan.
    Bake 25 minutes in 350\u00b0 oven.
    Then remove; layer eggplant, sauce and cheese and repeat in casserole dish.
    Bake, covered, for 20 minutes; uncovered for 10 minutes more.
