Make Ahead Mashed Potatoes - cooking recipe

Ingredients
    8 lb. potatoes, peeled
    1 can (13 3/4 oz.) chicken broth
    1/2 c. butter or margarine, softened
    1 c. light sour cream
    1 tsp. poultry seasoning
    paprika
    1 tsp. salt
    2 tsp. salt
Preparation
    Butter 13 x 9-inch baking dish.
    Set aside.
    Combine cut potatoes, 1 teaspoon salt and water to cover in large Dutch oven. Bring to a boil, reduce heat and simmer until tender.
    Drain. Return potatoes to pot with broth, butter, sour cream, poultry seasoning and 2 teaspoons salt.
    Beat with mixer until smooth. Spread potatoes in baking dish and sprinkle with paprika.
    Cover and refrigerate.
    Bake at 350\u00b0 for 30 minutes until puffed and heated through.
    May add French fried onions before baking.
    Makes 16 cups.
