Gourmet Potatoes - cooking recipe

Ingredients
    6 medium potatoes
    1/4 c. melted butter
    1 1/2 c. grated Cheddar cheese
    1 c. sour cream
    2 green onions, chopped
    1 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. butter, softened
    1/2 c. grated Cheddar cheese
Preparation
    Cover potatoes with salted water and bring to a boil.
    Reduce heat and cook about 30 minutes, or until tender.
    Drain and cool slightly.
    Peel and coarsely shred potatoes; set aside.
