Mary Ball Washington (1784) Gingerbread - cooking recipe

Ingredients
    1/2 c. butter
    1/2 c. dark brown sugar
    1/2 c. light molasses
    1/2 c. honey
    1/4 c. sherry
    1/2 c. milk
    3 c. flour
    2 Tbsp. ginger
    1 1/2 tsp. cinnamon
    1 1/2 tsp. mace
    1 1/2 tsp. nutmeg
    1 tsp. cream of tartar
    3 eggs, well beaten
    2 Tbsp. grated orange rind
    1/4 c. orange juice
    1 c. raisins
    1 tsp. baking soda
    3 Tbsp. warm water
Preparation
    Cream the butter. Add brown sugar and beat well. Add molasses, honey, sherry and milk.
    Beat very well. Sift flour and cream of tartar.
    Add alternately with beaten eggs to sugar mixture.
    Add orange rind and juice. Add raisins and baking soda that you dissolved in warm water.
    Grease a 13 x 9 x 2-inch pan.
    Line with wax paper.
    Grease paper.
    Bake in a 350\u00b0 oven for 45 to 60 minutes.
