Squash Relish - cooking recipe

Ingredients
    8 c. squash, cut up
    2 c. bell pepper, cut fine
    2 c. onion, cut fine
    1 large pimento, cut fine
    3 qt. water
    3/4 c. salt
    3 c. sugar
    2 c. vinegar
    2 tsp. mustard seed
    2 tsp. celery seed
Preparation
    Soak first 4 ingredients in 3 quarts of water and 3/4 cup salt for 1 hour; drain well.
    Mix last 4 ingredients in a large pot. Bring to a boil.
    Add drained vegetables and bring to boil again. Do not cook.
    Put in jars and seal.
    Chill before serving.
